Recipe for Enlightment




Sit on the floor using a zafu pillow to raise the bottom 2-3 inches off the ground
combine sesame oil with chili paste and heat in a large skillet
crossing your legs in a traditional lotus or half lotus position
once the oil is hot add chopped garlic and spring onions and stir fry

shifting your weight slightly forward so that the knees touch the floor
combine cabbage, carrots, and 1/4 cup soy sauce
and stir-fry until the vegetables begin to soften

To straighten your back imagine the top of your head pushing up against the ceiling
stir in the remaining soy sauce,  and add the chicken filets to the pan
being careful to keep your weight centered and not to lean left right forward or back
fry until golden brown
placing your hands in a cosmic mudra
with your thumbs lightly touching creating an oval shape, resting on your thighs

Now combine 1 1/2 cups rice and 1 1/2 cups water in a medium saucepan
and bring to a boil over high heat
eyes are lowered and you are looking at the ground 2-3 feet in front of you
reduce heat to low and cook, covered for 10 mins or until liquid is absorbed and rice is tender

Count the breaths: one, inhale slowly through the nose, drawing the breath deeply into your diaphragm
place 2 cups dried shiitake mushrooms in a bowl and pour over boiling water
two, exhale slowly expelling the air fully until the stomach contracts
cover the mushrooms and set aside to soften while you make the soup base

In a second saucepan Add chicken stock, soy sauce, Sichuan pepper, and medium firm tofu
thoughts will naturally arise but do not attatch to them
simply acknowledge them and let them pass by
turn heat to high and bring to a boil. Then reduce to medium-low, and simmer for five minutes.

Continue counting the breaths for 30 minutes
taking care not to break up the tofu
once 30 minutes have passed, bow, to yourself, and to all practitioners in this and all lives everywhere
serve the stir fry together with the rice on a plate, and the soup in a bowl

Scatter with sliced spring onion and sesame seeds and a drizzle of sesame oil
